So, after quarantine, I was lucky to be able to visit a good friend Maximo Anderson and Fanny his mother. They both run SR. Kion a local Chifa Restaurant (Peruvian Chinese Fusion Food). Their location is really clean and they're keeping up the sanitary standards necessary for them to be able to stay open during this crazy pandemic, here in Lima Peru. They are very careful about everything they send out of their restaurant. I was really impressed with their management style. Very, Very impressive location!!!
The food was incredible and such a fusion of love and happiness at one location. But, do you know what Chifa mean? Well, I looked it up for you!
Chifa is culinary tradition based on Chinese Cantonese elements fused with traditional Peruvian ingredients and traditions. Though originating in Peru, the Chifa tradition has spread to neighboring countries like Ecuador, Chile and Bolivia. Chinese immigrants came to Peru mainly from the southern province of Guangdong and particularly its capital city Guangzhou in the late 19th and early 20th centuries. They settled for the most part in the coast of Peru and the capital city of Lima. The term chifa is also used to describe a restaurant where this type of food is served. Chinese-Peruvian food has become one of the most popular types of food in Peru. The first Chinese–Peruvian fusion restaurants were opened in Lima in around 1920 in Lima's China town (Barrio Chino); there are thousands of Chifa restaurants across all districts of Lima and many more throughout other cities of Peru, with sometimes multiple independent restaurants operating in close proximity on a single city block.

Entonces, después de la cuarentena, tuve la suerte de poder visitar a un buen amigo Máximo Anderson y Fanny, su madre. Ambos ejecutan SR. Kion un restaurante local de Chifa (comida de fusión china peruana). Su ubicación es realmente limpia y mantienen los estándares sanitarios necesarios para poder permanecer abiertos durante esta loca pandemia, aquí en Lima, Perú. Son muy cuidadosos con todo lo que envían fuera de su restaurante. Me impresionó mucho su estilo de gestión. Muy, muy impresionante ubicación !!!
La comida era increíble y una fusión de amor y felicidad en un solo lugar. Pero, ¿sabes a qué se refiere Chifa? Bueno, ¡te lo busqué!
